Italian winter minestrone soup

Let us warm you up this winter with our delicious and healthy recipe for minestrone soup. 

Serves 4

Cook time: 1 hour

1tbs olive oil
1 yellow onion finely diced
2 carrots finely diced
2 celery stalks finely diced
4 garlic cloves finely diced
1tbs dried oregano
2 bay leaves
2 tbs no-salt tomato paste
1 400ml can whole peeled Italian tomatoes
1 bag dried Italian soup mix
3lt salt reduced vegetable stock
100g dried wholemeal pasta spirals or similar
1 handful parsley roughly chopped
Warm crusty bread to serve
  1. On a medium to high heat, in a large heavy based pot, add oil, onion, carrot, celery, garlic and cook for 4-5 mins until translucent and fragrant.
  2. Add oregano, bay leaves, tomato paste, tinned tomatoes, soup mix, stock and bring to the boil.
  3. Cook covered for 45 mins, stirring every 5-10 mins, seasoning to taste.
  4. Cook pasta in soup for a further 10-12 mins according to packet directions.
  5. Serve sprinkled with parsley and warm crusty bread on the side, enjoy!
