Blueberry and chia compote

Chef and food stylist Jamie Humby shares his favourite blueberry and chia compote recipe. It’s quick, easy, and has only three ingredients!

2 cups frozen blueberries
1 tbs chia seeds
1 tbs honey
  1. Combine all the ingredients in a small saucepan, bring to the boil, then reduce the heat and let it simmer for 6-8 minutes until the compote is thick and chunky.
  2. You can then spoon over pancakes and store the remainder in an airtight jar in the fridge for another time. (double or tripe mixture to make a larger batch)
