Asian style chicken burgers with quick pickled cucumbers

Try our delicious and fresh Asian style chicken burger with pickled cucumbers and spicy mayo.

½ cup rice wine vinegar
1 tbs fish sauce
1 tbs honey
1 cup water
2 Lebanese cucumbers thinly sliced lengthways
500g lean chicken mince
2 cloves garlic minced
2 tbs ginger minced
1 lemongrass stalk minced (white part only)
1 lime leaf finely shredded
1 tbs tamari sauce
1 red chilli finely chopped
1 spring onion finely chopped
4 whole meal burger buns
2 tbs sriracha and 4 tbs low fat Greek yoghurt mixed, mixed leaves, shredded carrot, to serve
  1. Pre heat a bbq or chargrill on high.
  2. In a medium pot, add vinegar, fish sauce, honey and 1 cup of water and bring to the boil then remove from the heat to create pickle liquid. 
  3. Cover the cucumbers in the hot pickle liquid and set aside for 20 minutes, then drain.
  4. Meanwhile in a large bowl add chicken mince, garlic, ginger, lemongrass, lime leaf, tamari, chilli and spring onion and mix to combine well.
  5. Form mixture into 4 even shaped round patties and char on a high heat for 5 minutes on both sides or until cooked through, cover in foil and set aside to rest for 5 minutes.
  6. While your patties are resting, chargrill your burger buns until toasty.
  7. Assemble burgers by spreading a little sriracha and yoghurt on your buns, then adding your patty, pickled cucumbers, mixed leaves and carrot.
  8. Stick a skewer in each burger and serve.
