Watermelon, coconut and mint icy poles
I used to love coming home from hot summer days playing at school to some delicious homemade icy poles – there was nothing more refreshing! Here is a healthier alternative to store bought options which is quick to make and packed with flavour.

Freeze time: 2 hours
- ½ large watermelon, flesh removed and chunky cut
- 1 cup coconut water
- 1 tbs mint leaves
- Add all the ingredients to a blender and puree until smooth.
- Pour into icy pole molds and freeze for a minimum of 2 hours but preferably overnight.
