Mothers Day breakfast

If I had any say in it there would be multiple Mother's Days throughout the year. It seems to me that mums are always putting others' needs first and a little something special for her is often the last thing on anyone's mind. 

Maybe suggesting every Sunday should be special for mothers is being a tad on the greedy side, however once a month is absolutely a workable solution. Women have a few different things they must endure monthly so it stands to reason that one day a month she gets a little special treatment. 

How’s that for logic?

On her special (monthly) day mum could be sent for a massage, or to get her toenails done. If that's not really her thing, maybe everyone could pitch in and clean the house, or hire a cleaner for the day. You’d be hard pressed to find a mum that would not welcome this brilliant idea.

I know I'm absolutely dreaming about Mother's Day happening more than once a year so let's ensure that the one day per year dedicated to her is spectacular. Then, it lets her know that you appreciate everything she does for her and can tide her over for another 12 months.

Breakfast in bed is a cracking way to start that day, and this breakfast is so simple and fast that the kids could make for her while Dad makes her a cup of tea... and gives her a foot massage. 

And puts on a load of washing.

And...you get the picture.

Ricotta and avocado smash with smoked salmon on rye

Serves: 2
Time: 10 minutes
 
Ingredients:
  • 1/2 ripe avocado
  • 100g ricotta cheese
  • Zest of one lemon, plus cheek for squeezing on top
  • 2 large slices of good rye bread
  • 4 slices smoked salmon
  • A few finely sliced rounds of Spanish onion
  • 2 teaspoons baby capers
  • Cracked pepper and sea salt
  • Mesclun lettuce or alfalfa sprouts for serving
Method:

Place avocado, ricotta, and lemon zest into a bowl and smoosh together with a fork. Season well with a good crack of pepper and some sea salt.
 
Pop rye bread in the toaster and lightly toast.
 
Top each piece of toast with half of the mixture and place two slices of salmon on each.
 
Sprinkle with capers and Spanish onion. Squeeze a little lemon on each, and add a final crack of pepper.
 
Serve to mum in bed with a copy of the newspaper. Do not fight with your siblings for the rest of the day, and tell mum that you love her because she is awesome.
